Organic Wyfe of Bath™

Gouda-like cheese, this semi-hard cheese is made by placing the curd in cloth-lined baskets to retain a basket-shape, with a soft, light caramel colour. Wyfe of Bath takes its name from Chaucer’s ‘Canterbury Tales’.

Naturally mould-ripened cheese, this particular semi-hard cheese has a very lively acidity and a creamy texture.

A traditional Cornish farmhouse cheese with natural, edible mould rind, it has a wonderful, soft red veining annatto - the same vegetable dye is added as the curds are placed in mould throughout.

Unpasteurised Organic Somerset Cheese that Dates Back to the Time of Admiral Lord Nelson

This square cheese is soft and yielding with a white bloomy rind. Once cut into, it reveals an ivory-coloured interior. The flavour is mushroomy and creamy with a hint of lemons. It comes wrapped in parchment paper with a red wax seal.

Wrapped in Chestnut or Maple Leaves

Valdeón is one of the best-known Spanish blue cheeses from a town called Valdeón, high in the Picos de Europa mountains. Made from a variable combination of pasteurised goat, ewe, and cow’s milk, the cheese is matured for 3 months in natural caves, rich in Penicillium mould, which penetrates and blues the cheese. This creates its strong but not overpowering flavour, much like Roquefort but less salty.
